250 millilitres skim milk
1 tablespoon vinegar
275 grams butter, Softened
200 grams sugar
1 egg
Green gel food colouring
Pink gel food colouring
1/2 tsp watermelon flavouring
1/2 tsp cherry flavouring
450 grams Plain Flour
1/4 teaspoon baking soda
Pinch of salt
250 grams icing sugar
1 tsp lemon extract
Yellow gel food colouring
3 boxes of Nerds candy

1. Begin by making the buttermilk by combining vinegar and milk in a small bowl. Stir and then set aside. Preheat oven to 350˚F. Line 2 baking trays with parchment paper.
2. In a mixing bowl, cream 125 grams of butter and the sugar together until pale and creamy then beat in the egg. Divide evenly into two mixing bowls and flavour one with watermelon and add green food colour. For the second bowl, add cherry flavouring and pink food colour.
3. In a separate bowl add the flour, baking soda and salt, mix. Divide evenly into each butter mixture. Pour in the buttermilk, dividing equally between the two bowls. Mix until a batter forms.
4. Place each batter in a piping bag or large freezer bag and cut a one inch opening in one of the corners. Gently pipe out the batter on to the baking trays to make even mounds roughly 1 1/2 inches in diameter. Allow room for spreading. Bake in the oven for 12-14 minutes until risen and firm to the touch. Cool for 5 minutes on the trays before transferring to a wire rack to cool completely.
5. For the icing, whisk together the remaining softened butter, lemon extract, yellow colouring and icing sugar until smooth and spreadable. Spread onto the flat side of one of the pies. Place the second pie on top and roll in multi coloured nerds.
