Peach Upside Down Skillet Cake Julie Nolke
A peach upside down cake is here to show pineapple who's boss.
INGREDIENTS
1/2 cup butter
1 cup packed brown sugar
2 cups frozen Peach Slices, thawed
1/2 cup almond slices
1/3 cup peach juice, from concentrate
3 eggs, separated
1 cup sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
INSTRUCTIONS
Melt butter in a 9- or 10-in. ovenproof skillet. Add brown sugar; mix well until sugar is melted. Arrange peach slices in a single layer over sugar. Sprinkle almonds over peaches; set aside.
In a large bowl, combine egg yolks and sugar. Blend in vanilla and peach juice. Add the flour, baking powder and mix well.
In a small bowl, beat egg whites on high speed until stiff peaks form; fold into batter. Spoon into skillet.
Bake at 375° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Let stand for 10 minutes before inverting onto serving plate. Thanks for watching! Don't forget to subscribe for more videos!
